Shrimp Ceviche Recipe

☀️☀️☀️☀️ Serves 4-6  ☀️☀️☀️☀️

  INGREDIENTS:  

1 Lb. of medium/small shrimp, peeled and deveined  😃  2 Tbsp salt  😃 1 cup chopped cilantro  😃 3/4 cup lime juice (juice from 4-6 limes)  😃 3/4 cup lemon juice (juice from 2-3 lemons)  😃 1 cucumber, peeled and diced into 1/2-inch pieces  😃 1 cup finely chopped red onion  😃 1 serrano chile (remove ribs and seeds) minced  😃 1 avocado, peeled and cut into 1/2-inch squares

  PREPARATION:  

 👍 In a large pot, bring 4 quarts of water to a boil and add 2 tablespoons of salt. Add shrimp and cook for 1 to 2 minutes, depending on size of shrimp. (Please make sure you don't overcook the shrimp, to avoid it to become rubbery).  👍 Remove shrimp with a slotted spoon and place into a bowl of ice water to stop the cooking.

 👍 Drain the shrimp, and cut each piece in half.  👍 Place shrimp in a bowl and mix in the lime and lemon juice. Cover and refrigerate for 30 minutes. 

 👍 Remove from the shrimp from fridge and mix in the serrano chile and chopped red onion. Refrigerate for another 30 minutes. Before serving, add the cilantro, cucumber, and avocado. Buen Apetito! 👌

How to plan the perfect picnic

Let's start by saying that, when it comes to picnics, you can go big or small. Whether you choose a beach picnic, a grassy area in a park, or your building's rooftop, it doesn't matter where, if you plan it well and set the mood, you will be able to enjoy, relax and spend a beutiful afternoon... 

Picnics should be made simple, start for choosing the location, remember that you'll have to lug everything to your picnic site, so you don't want to over pack, or bring unnecessary stuff. You don't want to start your picnic feeling like you just finish your daily workout routine. 

Once you decided on the location, next you'll have to choose the food, whether you decided to cook or just bring cheese and crackers, remember that foods should be movable and simple. If you plan on making sandwiches, taquitos, empanadas, remember to bring a cooler and keep food on ice. It is recommended that food don't sit outdoors for more than 1 hour. The possibilities are endless when it comes to picnic food, but it also depends on what kind of mood you are trying to set. 

If you are planning a romantic picnic or a fun picnic with friends, the food and decor would be very different. For a romantic picnic, you could bring different cheeses, olives, crackers and a chilled bottle of white wine. If you are going with the romantic theme, consider bringing wine glasses, although is not practical, because outdoors they can be knocked down by the wind, but it'll definitely make a difference, nobody looks good drinking from plastic cups. You can even kick it up a notch and bring a candelabra for a truly romantic effect. 

Now, if it's a picnic with friend, you can bring sandwiches, and different potato chips, and brownies for dessert. You can never go wrong with brownies! But again, there is no limits on what to bring for dessert, if you want to show off your baking skills, you can bake your favorite pie and pre-cut in small pieces, ready to share.

Pack the essentials: 

1. Picnic basket, or cooler 

2. Ice 

3. Paper plates, plastic utensils 

4. Napkins 

5. Tablecloth or blanket 

6. Glassware (if you are going with the wine option) 

7. Bottle opener 8. Bug spray! 

9. Something to decorate, like flowers or a couple small pillows 

10. Lantern or candles if you plan on doing the picnic in the evening 

11. Sunscreen (if you are out during the day) 

12. Speakers that can be connected to your phone to play some background music 

13. Trash bag   

Now that you chose the location, menu and decoration, just seat, relax and enjoy a relaxing picnic with your honey or friends.

Tortas Fritas Recipe

☀️☀️☀️☀️ Makes 1 Dozen ☀️☀️☀️☀️ 

Tortas Fritas are a simple indulgence, perfect for a cold or rainy day. Tortas fritas are a staple in Argentina and Uruguay, with easy to find ingredients and very easy to make, you are sure to love this crunchy and sweet treat.

INGREDIENTS:  😃  5 tbsp Butter, melted and cooled slightly  😃  2 cups All-purpose flour  😃  1 1/2 tsp Baking powder  😃  1/2 cup Granulated sugar, to sprinkle on top  😃  1 tsp Salt  😃  2 cups Vegetable oil for frying  😃  2/3 cups Warm water 

PREPARATION:  👍  In a large, deep skillet, start by heating the oil for frying.

👍  Meanwhile, in a large bowl, mix the flour, salt and baking powder. Add the melted butter and mix well.

👍  Slowly add the warm water (to avoid making the dough sticky) and mix until the dough comes together.

👍 Turn out the dough onto a lightly floured work surface, and knead for a few minutes until the dough comes out smooth and uniform.

👍 Divide the dough into 12 pieces, and roll them between the palms of your hands, they hsould be roughly the size of a lime, and let the dough rest for about 10 minutes.

👍 Give shape to the tortas fritas, by flattening the ball of dough with your palms, until it becomes a disc of about 1/8 inch thick. Poke a hole in the center.

👍 Once oil is very hot (about 450 degrees Fahrenheit), carefully place the tortas fritas avoiding splattering. Oil must ve bery hot to avoid the torta frita absorbing the oil and turning out greasy and heavy.

👍 Two to four tortas fritas can be fried at once, depending onthe size of your skillet.

👍 Fry until golden brown, then flip with a pair of tongs, and repeat the frying on the other side.

👍 Remove and drain on paper towels, lastly, sprinkle with sugar and serve hot.
